It is elitist and a rip off and the Internet has democratized access to information and communication skills to the point that paying $30K a year to get them is insane. While I agree that specific interviews arranged by career centers may not be useful, career centers are important for connecting students with alumni.

I want to be more diligent about finding a mentor to help me grow, outside of my supervisor. We meet many in our lives that can become our coaches or mentors, for longer or shorter periods of time. Finding a good mentor/coach/teacher is tough, but starting a blog exposes you to a huge measure of immediate coaching.
